Grilled Veggie Chopped Salad Cook Time: 15 min; Prep Time: 30 min Servings: 4 • 9 oz H-E-B® Romaine Chopped Salad Base • 15 oz H-E-B® Vegetable Kabobs (Approximately 2 kabobs, skewers removed) • 1/4 cup, plus 2 Tbsp extra virgin olive oil • 1/2 cup feta cheese- crumbled • 1/4 cup roasted salted sunflower seeds • 3 Tbsp freshly squeezed lemon juice Instructions 1. Preheat grill to medium high heat. 2. Toss veggies in 2 Tbsp oil and season generously with salt and pepper. Place on grill and cook until veggies are nicely marked on all sides. 3. Remove veggies from heat and allow to cool, then chop and set aside. 4. To assemble salad, place chopped salad greens in bowl, add chopped veggies, feta cheese and sunflower seeds. Add lemon juice and remaining ¼ cup oil then toss everything together to mix well. Season to taste with salt & pepper.
