Bourbon Pork Tenderloin & Vegetables: Prep Time: 10 minutes. Cook Time: 30 minutes. Makes 6 servings. You Will Need: 1 pkg. McCormick One Seasoning Mix, divided; 1 pork tenderloin, about 1 lb; 2 medium sweet potatoes, peeled and cut into 1-inch cubes; 1 medium onion, cut into thin wedges; 1 tbsp oil. 1. Preheat oven to 400 degrees F. Rub pork tenderloin with 2 tbsp of the Seasoning Mix. Place in center of large shallow foil-lined sheet pan sprayed with no stick cooking spray. 2. Mix sweet potatoes, onions and oil in bowl. Add remaining Seasoning Mix; toss to coat well. Arrange around pork on sheet pan. 3. Bake 30 minutes or until pork is desired doneness and sweet potatoes are tender. Slice pork and serve with sweet potatoes and onions. Kitchen Tips: Substitute red potatoes, white potatoes or butternut squash for the sweet potatoes. Try using a medium apple, cut into thin wedges in place of onion. Prefer chicken? Try substituting boneless chicken thighs or boneless chicken breasts for the pork tenderloin. Bake until chicken is cooked through.
