GLUTEN FREE PANCAKES Cook Time: 5 Minutes Prep Time: 10 Minutes Ingredients 1/2 cup H-E-B Organic Coconut Flour 1/4 cup Oat Flour 1/4 tsp Kosher Salt 2 Tbsp Sugar 2 Tbsp Baking Powder 1 Egg 1 tsp Vanilla Extract 1 1/2 cup Whole Milk Instructions 1. Place a large skillet or griddle over medium heat. In a medium bowl combine coconut flour, oat flour, kosher salt, sugar and baking powder. 2. In a second medium bowl, whisk egg until frothy and then add vanilla and milk; whisk to combine. 3. Add egg mixture to bowl with dry ingredients and whisk until just combined; be careful not to over mix. 4. Spray griddle or skillet with non-stick spray. Pour 1/4 cup batter onto griddle and cook 3 to 4 minutes. Carefully flip pancakes and cook an additional 1 to 2 minutes. 5. Serve immediately with your favorite toppings like syrup, butter, jam, whipped cream, or fruit. Makes about 3 pancakes
