Fully Loaded Roasted Potatoes Cook Time Minutes: 45, Prep Time Minutes: 10, Servings: 4 Ingredients 1 lb baby potatoes 1 Tbsp olive oil 1 lb ground beef 1 cup onions, chopped 1 cup frozen corn 1 1/4 oz H-E-B® Taco Seasoning Packet 1 cup H-E-B® Shredded Restaurant Fancy Style 50/50 Cheese Blend 1 large avocado, diced 1/4 cup sour cream 1/4 cup green onions, diced 1 jalapeño, seeded and diced Instructions 1. Preheat oven to 400ºF. 2. Place potatoes in a 9×13-inch baking dish and roast 30 minutes or until tender and soft. 3. Meanwhile, cook ground beef in a large skillet over medium-high heat until well browned. 4. Add onions, cook an additional 2 to 3 minutes, then add corn and taco seasoning packet. Cook until corn is heated through. Set aside. 5. Once potatoes are cooked through and well roasted, spread taco mixture over the top, cover with cheese and bake until cheese is melted. 6.
